ELOGIO ALLA LENTEZZA Minutolo Passito Valle d'Itria IGP 2021

Elogio alla Lentezza has an intense golden yellow color, sometimes verging on amber. On the nose is complex, characterized by very rich and intense aromas. There are distinct fruity and spicy notes, aromas of dried acacia flowers, apricot jam, candied citrus fruits with sweet vanilla and spicy notes on the finish. On the palate, it is intense, of remarkable sweetness, confirms the aromas perceived on the nose and gives a sensation of pleasant softness and roundness on the palate. Very long persistence, fresh and well structured, extremely balanced, never excessively sweet or cloying and perfectly balanced.

Born as a meditation wine, it inspires pleasant reflections and feeds conversations. A wine meant to slow down for a moment all the frenzy that everyday life imposes on us. This wine is a real hymn to slowness. A perfect match with desserts, dry cakes and small pastries as well as cheese also seasoned or herbed.

Elogio alla Lentezza is a dessert wine obtained from the late harvest of Minutolo grape. After a careful selection, the grapes are left hanging on the vine with the stem twisted and are left to over-ripe on the plant before being harvested. Once picked, they complete the drying on stacked baskets in suitable environments with forced ventilation and humidity control systems. After drying, the grapes are pressed and vinified following the white vinification method and aged in wood for two months before being released on the market.
